J2 Steel: Japanese Carbon

J2 is a traditional Japanese carbon steel emphasizing edge over durability. Excellent sharpness. Easy to sharpen. Rusts easily. Best for kitchen knives with maintenance commitment. High-maintenance but delivers exceptional edge.

Damascus Steel: Layered Artistry

Damascus is not a single steel-it’s multiple steels forge-welded together. Performance depends on composition. Beautiful aesthetic. Balanced hardness and toughness. Requires maintenance.

Stainless Steel: Corrosion Resistance

Any steel with 10.5%+ chromium. Common types: 154CM, 440C, N690. Corrosion resistant. Lower edge retention than carbon. Harder to sharpen. Forgiving for beginners.
