Measured a few millimetres up from the apex, this figure decides how much material the blade has to displace as it passes through. A blade at 0.3mm behind the edge slices; the same blade at 0.8mm wedges and splits.
Why Cheap Knives Are Thick
Thicker edges survive shipping, abuse and warranty claims. From a manufacturer’s perspective a thick edge is risk management. From yours it is the reason the knife feels blunt when it is technically sharp.
